I love nachos! I don't make this casserole very often, only because it's a lot of steps and during the week, we seem to want to make easier recipes. This casserole is great for weekends, for potlucks, and for parties. If it's for a potluck or party, I use corn chips instead of corn tortillas and lots of cheese. For dinner though, I use corn tortillas and less cheese. I'll also make 2 small casseroles, one for eating immediately and the other one for dinner in 2 or 3 days. I don't mind baking the lettuce in the casserole but if you don't like it after the first time, you can bake it without the lettuce and put the lettuce on top just before serving. Oh, and don't forget the jalapeños! We each put jalapeños on our plate after dishing ours out but feel free to bake them in the casserole if you don't have kids (or adults) that can't eat jalapeños.
